is it possible, and if so, how, do I draw volume envelope for the Master channel - i.e. over the whole mix.
And is it possible to drawn a volume envelope for the the amount that I send from a track to an aux channel?

Yep, you do it in the same way as you draw other envelopes - click on the selection arrow that is part of the black triangle/ramp on the toolbar. Select the envelope you want and draw away.
