Even when I have a certain track created etc and set to record, when I press record it records to the one I have selected, but creates a new track… is this normal? Can I shut it off?

i think you can sort that out under the recording meter,theres a hammer and a couple buttons,under one of the buttons it will ask where the channels should be recorded to,select new track, 
Hammer icon on REC Vu meter… disable recording from channel you DON’T want. Also, press Ctrl+P to open Preferences, go to Options Tab and uncheck “Auto add tracks when Live button is pressed”. IMO that one should be off by default but whatever…
