You can set the instrument for the screen drums in the “display” box on top, you should be able to use an AUv3. The default mapping is the general midi one, but you can tap on the pencil on the upper left, then long press on a drum item to select which note it should be assigned to.
As for routing MIDI tracks to other tracks, that’s supported when a track has a plugin that has MIDI output, e.g. a MIDI plugin. For example you can add the n-Track builtin Arpeggiator to a track, and record in another track the MIDI output of the arpeggiator.
For me, whenever I try to change it to an auv3, it brings it back to a piano keyboard… and creates another track - but it’s a very cool tool. Maybe you can look into that if you have a chance ?
Also, when it says “add as instrument bus” on the bottom right, what does this mean?

When adding a new Instrument track, if you select the “Add as Instrument Bus” option first, the app will create two (or more) separate tracks: a MIDI track and its associated instrument channel(s). This setup can be particularly useful, for example, in scenarios such as working with multi-output instruments where you want finer control over each output channel.
What we refer to as an “Instrument Track” combines both the MIDI and instrument elements into a single track for simplicity and ease of use.

You’re right—currently, there’s no way to open the Screen Drums controller for those tracks. I initially thought it was possible, but I was mistaken.
We’re actively working on this and will include the feature in the next release.

You can now use the Screen MIDI Drums controller on any Instrument track.
After activating the Pads mode in the on-screen keyboard, the option to switch to de Drums controller appears in the toolbar.
